Spice Basket Special Chicken Roast Recipe – Authentic Kerala Style Flavor

Full Chicken Roast Recipe:-


1. Clean and score the chicken (1kg) and rest in vinegar and lemon water to make it soft.
2. Mix together 2 table spoon Spice Basket Kashmiri chilli powder, salt, 1.5 table spoon Spice Basket coriander powder, 2 tsp Spice Basket turmeric powder, 1 tsp Spice Basket pepper powder,1/2 cup curd, and 2-3 table spoon Spice Basket chicken masala. 
3. Add oil or water and mix well. Marinate the chicken well. Tie the legs keeping them together. Rest for min 4 hours or overnight in refrigerator after covering the chicken well.
4. Take a large pressure cooker. Add 1/2 cup water and keep a vessel for chicken to rest. Place the chicken. Pressure cook in medium to low flame and wait till the pressure is released. Drain out the chicken stock left in cooker.
5. In a large pan, add little coconut oil, fry both the sides of chicken in high flame.
6. Add chopped onion and green chillies chopped and sauté. Add crushed ginger garlic and 2 tomatoes pureed. Sauté well.
7. When the raw smell goes, add 1 tsp Spice Basket chilly powder, 1/2 tsp Spice Basket turmeric powder and 1/2 tbsp Spice Basket chicken masala. Add. The left over masala that is used to marinate chicken. Add little chicken stock and cook till the oil is seen outside.
8. Now add the remaining stock. When it start boiling, add cashew almond paste made by grinding 10 almonds and 10 cashews with little water.
9. When it boils add chicken. Cover the chicken with gravy and cooked closed for 5 minutes or until the gravy reaches needed consistency. Check the bottom of the pan randomly to make sure the chicken does not stick to the pan.
10. Add coriander leaves and serve after 10 minutes.
